Miso Soup with Onion and Broccoli
1 small onion sliced into half moons
55g broccoli cut into small florets
1 ½ tsp barley miso
Spring onions chopped to garnish
Wash the wakame quickly under cold water and soak in a very small amount of water for 3 minutes. Slice into small pieces.
Bring the water to the boil add the onions and simmer uncovered for 5-7 minutes.
Add the wakame with its soaking water and broccoli and simmer a further 5 minutes.
Puree the miso with a little of the soup liquid then add to the soup.
Reduce the heat to low and simmer 2 minutes.
Serve, garnishing each bowl with chopped spring onions.
