Fruity Rice Salad
175g long grain white rice
125ml vinaigrette dressing
1 tsp grated orange zest
2 tsp clear honey
2 tsp orange juice
½ tsp ground ginger
2 oranges segmented
125g grapes halved and seeded
½ papaya peeled seeded and chopped
1 mango peeled stoned and chopped
Cook rice. Cool.
Whisk together the vinaigrette dressing, orange zest, honey, orange juice, and ground ginger.
Combine the cooled rice and all the fruit.
Pour over the dressing and toss with a fork.
Cover and refrigerate until required.
Fluff up and serve.
