Banana and Rice Salad with Curry Dressing
red/green pepper thinly sliced
1 small onion finely chopped
2 bananas peeled and diced
4 heaped tbsp cold cooked rice
2 heaped tbsp coarse coconut
2 level tsp sugar
½ level tsp salt
1 level tsp curry powder
2 tbsp lemon juice
3-4 tbsp oil
Few sprigs watercress or coriander to garnish and a lemon twist.
Combine the pepper, onion, bananas, rice and coconut.
Shake dressing ingredients well and pour over the salad.
Mix well with chopsticks or 2 forks.
