Wakame Vegetable Stew
1/2 cup wakame soaked for 3 minutes and sliced into pieces
3 3/4 cups water
2 medium onions quartered
2 medium turnips quartered
225g brussel sprouts
4 cups pumpkin cut into chunks
3 tbsp shoyu or tamari
2 tbsp mirin (optional)
Place the wakame in the bottom of a heavy pot.
Add the water, bring to boil.
Add the onions simmer 3-4 minutes.
Add turnips, brussel sprouts and pumpkin in layers seasoning with the shoyu and optional mirin.
Simmer 15-20 minutes
This dish can also be cooked with cubes of tofu or seitan on the top.
