Peanut Rice Supreme
1 onion chopped
1 cup chopped celery
3 tbsp toasted sesame oil
1 cup roasted coarsely chopped peanuts
3 cups cooked brown rice
1 cup cubed tofu
½ cup peanut butter
1 tbsp tamari
½ tsp sea salt
½ cup whole wheat bread crumbs
½ cup vegetable stock or water
Preheat the oven to 375 F. Oil a medium-size casserole dish.
Sauté the onion and celery in the oil until the onions are golden.
Add the remaining ingredients and mix together well.
Place the mixture in the casserole and pat down.
Cover and bake for 30-40 minutes.
Remove, cool for a few minutes and unmold onto a serving platter.
