Almond Coriander Couscous
3 cups (600g) couscous
3 cups (750ml) boiling water
¼ cup (60ml) olive oil
1 clove garlic, crushed
2 green shallots, chopped
¾ cup (105g) slivered almonds, toasted
1/3 cup (50g) dried currants
½ cup chopped fresh coriander leaves
Combine couscous and water in bowl, stand 5 minutes or until water is absorbed. Fluff couscous with fork.
Heat oil in large pan, add garlic and shallots, cook, stirring, until shallots are soft. Add couscous to pan, stir over heat until heated through.
Stir in nuts, currants and coriander.
