Tofu Mayonnaise

1 cake tofu 1 cup water
2 tbsp umeboshi or brown rice vinegar
2 tbsp lemon juice
½ tsp sea salt
¼ tsp ground coriander
1 tbsp sesame oil (optional)

Blend ingredients until creamy.
Will keep refrigerated for several days.
If the mixture separates, stir well before serving.
