Goma-shio (Black sesame seeds & salt)
7 parts sesame seeds 1 part sea salt (try Celtic or try Kelp)
Heat a heavy bottomed fry pan over a fast heat.
When hot add the seeds.
Lower the heat and dry roast, stirring occasionally until they begin to turn golden.
Add the salt and continue roasting until the seeds are well done.
When this mix has cooled, grind in a mortar and pestle or blender - to a powder.
Store in an airtight container and use within 2 weeks.
