Lemon Rice Pudding

50g short or medium grain rice
300ml milk
300ml cream
1 tbsp butter
2 tbsp sugar
1 lemon
extra cream

Wash the rice.
Peel the lemon taking off strips about ¼ inch wide and 1-2 inches long.
Put rice, Lemon peel, sugar, butter, milk and cream into an oven dish.
Cook at 125 C for 2-3 hours until the rice is cooked.
Stir every ¾ hour.
About ½ hour before it is cooked add cinnamon (approx. 1 tsp).
When the pudding is done add lemon juice and some more cream if it is too solid. Put a light sprinkle of cinnamon on the top and brown the top lightly.
Serve chilled.
