Date and Prune Chocolate Sponge
275ml apple juice
100g wholemeal flour
25g cocoa or carob powder
rind of one orange
2 tsp baking powder
75g molasses sugar
Soak prunes in apple juice for at least 6 hours till swollen and plump.
Preheat oven to 180 C.
Grease a 1L ovenproof dish.
Heat water, oil and sugar together until sugar melts. Do not boil. Leave to cool.
Stew prunes in apple juice for 10 minutes till soft. Remove from juice and de-stone Chop roughly.
Add dates to remaining apple juice and stew 5 minutes until juice is dissolved.
Mix dates and prunes and spread on base of dish.
Sieve cocoa and baking powder and add flour and rind. Stir in the COLD sugar liquid to form thick sponge batter. Spread sponge on top of the fruit and bake 30-40 minutes until risen and firm.
Serve with soya custard or orange sauce.
