½ cup raisins
1 cup sultanas
2 cup water
11/2 cup cold mashed kumera or pumpkin or pureed carrot
3 tbsp oil
11/2 cup rice flour
1 ½ cup soy flour
3 tsp baking powder
1 tsp mixed spice
1 tsp nutmeg
1 tsp cinnamon
Bring the currants, raisins, sultanas and water to the boil.
Remove from the heat and stir in the mashed vegetables.
Add oil and cool.
Sift dry ingredients and stir into the mixture.
Oil a deep dish and spread mixture evenly.
Bake at 160 C for 1 ½ to 2 hours or till cooked when tested.
Keep in fridge or slice and freeze.
