Carob Fudge Cake

1 1/8 cup sifted amaranth flour + ½ cup arrowroot
or 1 cup sifted brown rice flour + ½ cup sifted amaranth flour
¼ cup carob powder
1 tsp baking soda
½ tsp salt
2/3 cup warm water
1/3 cup oil
1/3 cup honey
1 tbsp vinegar or lemon juice or ¼ tsp vitamin C crystals
1 tsp vanilla
¼ cup chopped nuts (optional)

Grease baking dish.
Preheat oven to 350F. Combine dry ingredients and mix well.
Combine liquids and mix with whisk or fork.
Pour over dry ingredients and mix quickly.
Pour immediately into prepared baking dish.
Scatter nuts on top.
Bake 25-30 minutes.
Usually cracks appear on top when done and inside remains moist and fudgey.
