Couscous - March 2000

This month we take a look at the easy to prepare couscous. Couscous is a Middle Eastern staple grain processed from wheat and is similar to bulghur wheat in its preparation.
Simply combine couscous and boiling water in bowl eg 3 cups boiling water to 3 cups couscous.
Stand 5 mins or until water is absorbed.
Fluff couscous with fork.
Add whatever you like.

Some ideas are:

Almond Coriander CousCous

3 cups (600g) couscous
3 cups (750ml) boiling water
¼ cup (60ml) olive oil
1 clove garlic, crushed
2 green shallots, chopped
¾ cup (105g) slivered almonds, toasted
1/3 cup (50g) dried currants
½ cup chopped fresh coriander leaves

Combine couscous and water in bowl, stand 5 mins or until water is absorbed. Fluff couscous with fork.
Heat oil in large pan, add garlic and shallots, cook, stirring, until shallots are soft.
Add couscous to pan, stir over heat until heated through.
Stir in nuts, currants and coriander. Serves 6.

Chickpea Coucous

½ cup vegetable stock
1 med red onion
3 medium green peppers
3 medium raw potatoes sliced
¾ cup chickpeas
¼ cup raisins
2 cups zucchini sliced
3 tbsp tomato paste
1 tsp ground coriander
1 tsp ground cumin seed
¼ tsp cayenne pepper
1 medium glove garlic crushed
½ tsp paprika
¼ cup white wine
275g couscous uncooked

Sauté onions and peppers in broth.
Add the remaining ingredients (except the couscous) and simmer for 35 minutes.
Meanwhile prepare the couscous according to instructions above.
Let the vegetables stand for 10 minutes and serve over the couscous.

If you are wanting that unique flavour of pinenuts and you're basil isn't promising plentiful pesto in this rather sunless city of  late; then here is a beaut Pinenut dressing. Serves 4

½ cup pinenuts
1 clove garlic
1 tsp grated raw ginger
1 Tbsp tamari
1 cup water approx.

Try this dressing on a fresh spinach salad.
Place the first four ingredients in a food processor with a ¼ cup of water. Blend. Add more water until the dressing is smooth and creamy.

Sprouting Forth ...
ALFALFA SEEDS are out of stock – we are waiting for organic seeds to come in and they shouldn't be long now. However, we do have
Red clover is best mixed together with FENUGREEK, RADISH and YELLOW MUSTARD SEEDS or you will lose them in the jar. Combine 1 part of each per jar (eg 2 tbsp each).

Olive Oil
Our olive oils, both the organic and the nonorganic have a strong aftertaste at present.
This is not rancidity but is because the olives have been milled fresh or some of the leaves have come through in the milling. The aftertaste will decrease as the oil matures.
Our non-organic olive oil is first grade, unfiltered, extra virgin, cold pressed. It is not blended with other older olive oil as is happening due to confused legislation in Europe. More on oils next newsletter.

Hooray! G. E. Free!

We have just about traced everything in the shop so we are almost 100% certain we are G. E. Free. Unfortunately we have had to discontinue some products because they have a G.E. ingredient or because the manufacturer could not assure us that they did not have any G.E. ingredients. We are challenging these suppliers to find alternatives. Thanks to all those who sent in submissions opposing the G.E. wheat trials in Canterbury. Monsantao NZ have withdrawn their applicatrion! Keep up the good work!

Recycling Supermarket bags, jars and plastic containers.
Please don't take offence if we ask you if the bags you bring us are clean.
Please don't take offence if we ask if the containers you bring us are clean and have lids and are actually suitable for putting delicious organic tahini and oils into.
