golden kumera to serve 6 (approx. 3 medium-size)
3 tbsp rice malt
½ tsp sesame or canola oil
1 tsp finely grated lemon peel
Preheat oven to 160C.
Slice kumera into thin rounds and steam until just tender.
Arrange in a single layer on a lightly oiled baking sheet.
Combine remaining ingredients and spread a thin layer of syrup mixture over the sliced kumera.
Bake 5-10 minutes.
Could substitute whole yams for kumera.
