Gluten-Free Basic Bread
gluten free bread mix:
3 cups buckwheat flour
3 cups rice flour
3 cups chickpea flour
1½ cups soy flour
2 tsp salt
3¼ cups gluten-free bread mix
1 tsp active baking yeast (or baking powder – use cold water instead)
2-2 ½ cups very warm water (until its barely thin enough to beat the lumps out)
Make bread mix.
Mix 3¼ cups gluten-free bread mix and other ingredients.
Pour into a greased bread loaf tin.
Let rise 10-15 minutes
Bake in a preheated oven at 150 C for 40-50 minutes.
Let stand for 5 minutes.
Tip out and cool on rack.
Slice. May be frozen. Best toasted.
